저는 Surf Palace 레스토랑의 헤드 셰프 Luka 입니다.
프랑스 남서부에 있는 서핑 성지 중 한 곳인
비스카로스 해변가에서 가장 핫한 서퍼들의
아지트에서 요리를 하고 있죠.
저는 이 곳에서 태어나서 자란 비스카로스 토박이예요.
여름시즌에는 일을하고 나머지는 여행을 하면서 살고 있답니다.
Q. 셰프님은 이 곳에서 어떤 요리를
선보이시는지 궁금한데
간단하게 설명해 주실 수 있나요?
세계를 여행하면서 받는 영감을
다양한 퓨전 요리로 사람들에게 소개하고 있어요.
남미나 아시아 요리를 저만의 프렌치 감성으로 풀어내기도 하죠.
비스카로스를 찾아오는 전세계의 서퍼들과
셰프로서 문화를 교류하는 하나의 방식이기도 해요.
Q. 듣기만해도 셰프님의 요리가 너무 궁금해집니다.
셰프님께서 요리와 처음 사랑에 빠지게 만든 요리가 있나요?
제 인생 첫 여행지 발리에서 먹었던 나시고랭이요.
세상에 이런 맛도 있다는걸
처음으로 느끼게 해 준 요리였거든요.
제가 모르는 맛이라 도대체 뭘 넣은건지도
가늠할 수 없어서 더 충격적인 만남이었죠.
이런 맛의 요리도 할 수 있구나 깨닫게 해 준 요리예요.
그러니까 처음 사랑에 빠지게 만든 요리라고 할 수 있을 것 같네요.
Q. 만약에 신께서 지금 당장 셰프님께서 원하는 음식을
뭐든지 선물 해 준다면 무엇을 주문하시겠어요?
Tournedos rossini 요.
소고기 스테이크에 푸아그라와 트러플을 얹은 요리죠.
프랑스 전통요리중 하나인데,
기본적으로 새로운 퓨전 요리를 하는걸
좋아하는 편이지만,
클래식한 프렌치 요리도 아주 좋아하거든요.
Q. 만약에 셰프님의 남은 인생동안
딱 한가지 종류의 요리를 매일 먹어야 한다면
어떤 요리를 드시겠어요?
나시고랭이요.
심플한 볶음밥이라 먹기에도 편하고
입안에서는 아주 다양한 맛을 내니까요.
쌀과 다양한 채소, 달걀도 들어있고,
건강에도 좋을 것 같아요.
사실 발리 여행을 하는 동안
거의 매일 나시고랭을 먹었어요.
너무 좋아하거든요.
Q. 사랑이 요리라면 뭘까요?
음.. 나눠먹을 수 있는 음식이어야할 것 같아요.
한 접시를 가운데 두고 둘이서 같이 나눠먹는 음식.
그리고 달달해야할 것 같은데,
사랑하면 왠지 초콜릿이 떠올라요.
초콜릿 퐁듀가 괜찮을 것 같네요.
진저를 살짝 더해서 약간의 톡톡 튀는
맛을 더해주면 더 좋겠어요.
거기에 향긋한 딸기를
푹 찍어 먹으면
사랑의 맛일 것 같아요.
Q. 내일 저녁에 셰프님께서 꿈 꿔오던 이상형과
데이트를 할 수 있는 찬스를 얻었어요.
그녀를 사랑에 빠지게 하기 위해 어떤 요리를 준비하겠어요?
이탈리안 요리를 할 것 같아요.
아주 심플하고 모두가 아는
베이직한 요리지만 정말 맛있게요.
예를들면 까르보나라!
'이 요리 알고 있지만 이렇게 맛있게 만든건 처음 먹어봐'
하고 느끼게 하고 싶어요.

어릴적 가장 슬프고 힘들고 어려운 시간 속에 놓여있는

이 요리에 이름이 있는지는 모르겠지만
어릴적에 어머니께서 해주시던 요리가 떠 오르네요.
삶은달걀 위에 베샤멜소스와
치즈를 함께 뿌려
구운 그라탕 요리였어요.
아마 그녀가 지어낸 요리같은데,
제가 너무 좋아했던 요리죠.
쉽고 심플한 요리지만
저에게는 프루스트의
마들렌같은 요리예요.
그걸 먹으면 든든하게
다시 일어날 힘이 생길 것 같네요.
Q. 그럼, 셰프님께서 하나의 요리라면 뭘까요?
음 제 생각에는 세비체일 것 같아요.
날 생선인데 불이 아니라 레몬의 산미에 익힌 요리죠.
남미에도 일본에도 비슷한 요리가 있어요.
시간의 흐름과 전세계 사람들의
문화 교류와 함께 만들어진 요리여서
문화적으로 역사가 있는 요리라고 생각해요.
제가 요리라면 그렇게 다양한 문화가
서로 조화롭게 섞여서 만들어진 요리일 것 같아요.
제가 날 생선을 좋아하는 편이기도 하고요.
