Hotel Brach 에 오신 것을 환영합니다.
사실 우리는 호텔 브락이라고 부르지 않고
그냥 더 브락 이라고 하는걸 더 선호합니다.
브락은 호텔이 아니라 상상 속의 한 인물이거든요.
브락씨는 문화적으로 아주 풍성한 사람이예요.
먹는걸 좋아하고,
건강하게 운동하는 것을 좋아하는 사람이죠.
Q. 우리가 당신의 피를 맛 볼 수 있다면
당신의 피에서는 무슨 맛이 날까요?
음.. 아무래도 향신료 종류일 것 같은데요.
제 생각엔 큐민일거 같네요.
그런데 약간 달달할거 같기도 해요.
왜냐면 제가 단짠 단짠 요리를 좋아하거든요.
만약 당신이 내 피를 맛본다면 그런 맛일거예요.
큐민같은 향신료가 강한 맛을 내면서
약간 달달한 그런 단짠 단짠한 맛.
Q. 당신이 요리와 처음 사랑에 빠지게 만든 요리가 있나요?
트러플 리조또요.
트러플 리조또라고 하면
아주 간단해 보이는 음식이기도 하지만
저에게는 만들기가 아주 까다로운 음식이예요.
쌀이 딱 완벽하게 익어야하고,
양념고 골고루 잘 되어야하고,
소스도 아주 적절해야 하고,
트러플이 시즌에 맞아야하고 신선해야 하죠.
잘 만들어진 이 트러플 리조또를 맛본다면
분명히 사랑에 빠질 수 밖에 없죠.
처음으로 트러플 리조또 맛을 본건
제가 로얄몽소 호텔에서 일할 때였죠.
Roberto Rispoli 라는 셰프가 있었는데,
시칠리아 출신의 이탈리안 셰프였어요.
아주 훌륭한 이탈리안 셰프였죠.
그가 만든 트러플 리조또를 맛 보고
저는 하마터면 그에게 사랑에 빠질뻔했어요.
Q. 만약에 당신의 남은 인생동안
딱 한가지 종류의 음식을 매일 먹어야 한다면?
조금도 망설이지 않고 쌀이요.
쌀을 정말 사랑하거든요. 흰 쌀밥이요.
백미나 바스마티 쌀을 좋아하죠.
다른 것도 필요없이 완벽하게
익히기만 하면 된답니다.
거기에 소금간만 살짝 하면
매일 먹을 수도 있을 것 같아요.
쌀을 정말 사랑하거든요.
심지어 쌀은 100-150g 만 먹어도
속을 든든하게 채워주는 음식이죠.
제가 진심으로 좋아하는 재료예요.
그러니까 주저없이 쌀을 선택하겠어요.
Q. 당신을 처음으로 슬프게 만든 요리가 있다면?
음식이 슬픔을 줄 수가 있나요?..
음식이 슬픔을 줄 수 있는지 잘 모르겠네요.
맛이 마음에 안들거나 할 수는 있지만
슬프다는 감정을 생기게 하지는 않죠.
지금까지 저에게 슬픈 감정을 생기게한 요리는 없었어요.
저에게 요리는 열정과 기쁨만을 주는 부분 이거든요.
그러니까 딱히 저를 슬프게한 요리는 없네요.
요리를 하다가 실패를 하는 경우는 있어요.
가끔 간을 너무 세게 한다던가,
재료들이 서로 어울리지 않는다던가,
그러나 그런 것들이 나를 슬프게 하지는 않아요.
오히려 반대죠.
나를 조금 더 완벽하게 발전하게 만드는 과정이니까요.
이건 그러니까 사랑하는 사이에
애정싸움 정도라고 생각할 수 있어요.
사랑하는 사이에 100%가 되지 못 했을 때,
그걸 보완하기 위해 노력을 하겠죠.
이 사랑을 완벽하게 완성시키기 위해서 말이에요.
그러니까 어떤 음식도 나를 슬프게 만든적은 없어요.
실망은 하더라도 슬퍼한 적은 없죠.
Q. 그렇다면 사랑이 요리라면 뭘까요?
생선일 것 같아요.
신선한 가르파쵸로 요리 된 관자 요리라고 하겠어요.
그레나딘 비네거로 소스를 하고 거기에
장미수를 뿌려준 뒤에 레몬 가루를 곁들이겠어요.
이란 블랙 레몬이요.
사랑이 요리라면 무겁지 않고 부드러우면서
약간의 캐릭터도 갖고 있으면서
입 안을 공격적으로 다치게 하지는 않고,
입 안을 부드럽게 감싸면서 완화시키는 느낌을 줄 것 같아요.
그리고 당신에게 에너지를 주는 요리여야겠죠.
Q. 그렇다면 이번엔 우정이 요리라면 뭘까요?
아 우정이라면 나눌 수 있는 음식이어야겠어요.
어떤 요리라기보다는 빵이라고 하겠어요.
저에게 빵은 손으로 잡고 둘로 갈라서
나눠 먹을 수 있는 유일한 음식이예요.
우리의 일상 속에 녹아있는 음식이기도 하고요.
저에게 빵이란 항상 나눔을 뜻하는 음식이었어요.
그러니까 저에게 우정은 요리보다는 빵이라고 하겠어요.
Q. 혹시 당신에게 아주 친한 셰프 친구가 있나요?
그리고 당신은 그들과 동시에 한 여자에게 사랑에 빠져버렸어요.
그래서 당신들은 한 여자의 마음을 누가 사로잡을지 결정하기 위해서 요리 대회를 열기로합니다.
그 대회에서 셰프님이라면 어떤 요리를 선보이실 건가요?
물론 있어요. 멋진 셰프 친구들.
셰프 친구는 나를 깊게 이해하는 사람들이예요.
저는 저를 닮은 요리를 선보이겠어요.
내가 좋아하고 내가 만들기 좋아하는 요리로요.
저라면 캐비어를 곁들여서 호무스를 만들래요.
향신료를 많이 쓰겠죠.
제가 좋아하는거니까요.
Sumac 과 Zaatar 라는 향신료를 쓸래요.
마무리로 레몬과 라임으로 향을 더할거예요.
옆에는 호무스를 발라먹을
조그마한 빵조각을 세팅해 두고요.
그리고 같이 사이좋게 나눠먹을거예요.
Q. 그 요리로 사랑을 쟁취할 수 있을지 너무나 궁금해 지는군요.
결국 당신이 그 대회에서 승리를 하게 되었어요.
당신이 사랑하는 여인의 마음을 사로잡았네요.
그런데 당신의 소중한 셰프 친구는 슬픔에 빠지게 되었어요.

볼로네제 소스 파스타요!
아 당연히 볼로네제 파스타를 해 줘야죠.
당장 슬퍼하고 있으니까
시간이 오래걸리는 요리를 하면 안되잖아요.
심플한걸로 가야죠.
갈은 소고기가 아주 듬뿍 들어간
진한 볼로네제 소스에 파스타를 넣고
신선한 파슬리와 올리브 오일로 마무리를 하도록 하죠.
음.. 아마도 거기에 에스플렛
고추가루를 조금 더하겠어요.
슬픈땐 약간 매콤하게 올라와 줘야죠.
그리고 사이좋게 나눠먹겠어요.
좋은 레드와인을 곁들여서요.
어쨋거나 알콜이 슬픔을 잊게하는데는 최고잖아요?

저는 랍스터요.
끓는 물에 아주 아주 살짝 익혀서
아주 질 좋은 홈메이드 마요네즈를
옆에 곁들인 랍스터요.
랍스터 꼬리를 잡고 마요네즈에 푹 찍어서
한 입 크게 먹는다고 상상해 보세요.

**Return Instructions
